Watermelon Mint Julep
Yield: Yield: 1 serving
Watermelon juice 2 oz.
Bourbon 1 oz.
Citrus simple syrup (recipe follows) 1 oz.
Peach schnapps ½ oz.
Mint sprig to garnish
In mixing glass, combine watermelon juice, bourbon, simple syrup and peach schnapps. Mix together; pour over crushed ice. Garnish with mint sprig.

Citrus Simple Syrup
Mint leaves 1 cup
Sugar 1 cup
Water ½ cup
Lemon juice ½ cup
Combine mint, sugar, water and lemon juice in sauce pan; boil until sugar is dissolved. Strain.
